Daniel Boulud was raised with his grandmother's inspiring home cooking on his family's farm in Lyon, France. He was further inspired in his homeland by training under renowned chefs, including Roger Verge. After two years in Copenhagen, he moved to Washington, D.C., to serve as chef to the European Commission. Next, in New York City, he opened the Polo Lounge at the Westbury Hotel and Le Regence at the Hotel Plaza Athenee. From 1986 to 1992, he served as executive chefat Le Cirque. In 1993, he opened the much-heralded Daniel; in 1998, Cafe Boulud; in 2001, DB Bistro Moderne in New York City, and a second Cafe Boulud in Palm Springs.

Danny Meyer is president of Union Square Hospitality Group, overseeing Union Square Cafe, Gramercy Tavern, Eleven Madison Park, Tabla, Blue Smoke, and Jazz Standard, all based in New York City. Mr. Meyer created and launched Union Square Cafe in 1985, pioneering a new breed of American eatery pairing imaginative food and wine with hospitality, comfortable surroundings, and value.

Julian Niccolini was once described by GQ as the "mad-capped Maitre d' of America's most powerful lunchroom." The restauranteur began his career at The Four Seasons in 1977 and today co-owns the restaurant with longtime partner Alex Von Bidder. Chosen to develop a lunch crowd in the then-empty Grill Room, Mr. Niccolini and Mr. Von Bidder created the phenomenon that today is the legendary "Power Lunch."

R.W. Apple, Jr. has circled the world in his coverage of international events, tastes, and travel experiences. An associate editor of The New York Times since February 2002, Mr. Apple has served as chief correspondent and chief Washington correspondent, as well as bureau chief in Washington, Albany, Saigon, Lagos, Nairobi, London, and Moscow.
